    Reibekuchen are German potato fritters served with apple sauce.They are often sold at street fairs and markets, such as Christmas markets in Germany.

    For Pancakes

    1 kg Potatos
    10 g Salt
    1 small Onion peeled and grinded
    2 eggs
    30 g plain Flour
    100 g Lard (or Oil)                   

    For Apple Sauce

    750 g cooking apples
    125 ml water
    75 g caster sugar


    Peel,core and chop the apples. Cook with the water until soft. Then pass them through a sieve and put in the sugar to taste.

    Peel and grate the potatoes put in the salt, the grated onion, egg and plain flour and stir well. Heat the lard (or Oil) in a pan and put in the dough with a big spoon and flatten it. Fry it on both sides until it is golden brown.
    Serve it with Apple sauce or muscovado sugar or Maple syrup.
