  • Jerk Chicken

    Jerk Chicken, a spicy grilled-meat dish mostly associated with Jamaica but common throughout the Caribbean.

    For the Marinade

    4 spring onions
    1 scotch bonnet pepper, seeds left in
    3cm root ginger
    2 tbsp thyme leaves
    100 ml cider vinegar
    3tsp honey
    2tsp ground all spice
    1tsp ground cinnamon
    2tbsp olive oil
    1 tsp salt
    1 tsp ground black pepper




    Ground all the ingredients mentioned in the Ingredients to a smooth powder.

    Prepare the chicken by making cuts into the meat. Then season the chicken with chicken seasoning, a pinch of salt and black pepper and 4 cloves of garlic.

    Take the marinade and cover all the pieces generously and leave it overnight in the fridge.

    When you BBQ, have extra marinade sauce at hand to add to the chicken whilst it is being cooked over the fire. Turn the chicken regularly until it is cooked through ( the juice should run clear when a skewer is pushed into the thickest part of the chicken).
