Italian Fusion Dish - Pesto

This Italian fusion dish couldn't be easier. It's quick and family-friendly.

Ingredients
1 large pack Quorn mince
1 pack Spaghetti
1 Jar of pesto
2 tablespoons Olive oil
2 Peppers
3 Carrots
Handful of fresh Basil
1 Leek
1 teaspoon crushed Garlic
1 tin Butter beans
2 Vegetable stock cubes
Salt and pepper to taste
Steps
Cut the leek and gently fry with garlic til soft. Cook the spaghetti.
Add the Quorn mince and stock cubes dissolved in a cup of hot water.
Add the jar of pesto and mix in.
Add butter beans and stir through.
Add half the fresh basil and stir adding salt and pepper to taste.
Sprinkle the rest of the fresh basil on top.
Chop peppers and carrots to accompany the dish and serve with cooked pasta.
